To put it simply, sake is called differently depending on the degree of rice grinding
Daiginjo refers to sake with the most rice removed. (It is called Daiginjo from 50% or more.)

This sake is polished to 40%. The rice used for this sake is also carefully selected rice suitable for sake brewing.

Because more rice is polished, the sake has a less cloying taste, a mellow aroma, and a clean, refreshing taste.
